As a new pilot to UAL, I note - and am delighted by the fact - that accelerated flight (x2) is permitted for flights of more than 4 hours over the Atlantic or Pacific Oceans. Can I just check, though? Would I be right in assuming that the time awarded for the flight in the logbook will be reduced in line with how much accelerated time is used?

That's correct. ACARS will record how long you fly rather than how long the flight would take at 1X simulation. Remember, you cannot time-accelerate when you fly online.
